Suggestions:

Use due-dates when creating a Turnitin assignment. Also, students will not be able to see their scores if you have “muted” the assignment.
You can select how much of a match percentage to exclude (say, less than 5%). Note that if the paper matches 4%, and it’s a legitimate plagiarism, then it will not show up in that scenario. But it could help narrow down exactly where the student copied their work, too.
Make two assignments: one that does not store the student paper in the repository, to use as a first-draft or teaching moment, and then the actual final assignment.
Turnitin also comes with a grammar checker, if you are interested in checking grammar as well as plagiarism.
